Long Description Reliable performance for proofing and basic holding needs. Single clear, poly-carbonate door. Fast heat-up and recovery through a thermostatically controlled (80°F to 190°F / 27°C to 88°C), forced convection heating system designed to gently circulate hot air for improved temperature consistency. Features adjustable universal wire slides on 1½" increments to hold 12 full-size sheet pans, 24 half-size sheet pans or 24 full-size (1/1GN) 2½" deep steam pans. (Additional wire slide pairs available to increase this capacity to 35 full-size sheet pans or 36 full-size steam pans.) cULus and NSF Listed.
